I think Edward just wouldn't feel comfortable having Winry around, not so much because of the fact she might annoy him to an early death, but rather because he feels worried about her. The kid has a habit of blaming himself for every little thing that has happened to him and Al so far, what's to say what he would feel if something might happen to Winry during their journey?

Well, I'm making a fanfic where Ed finds out he loves Win with the help of everyone. And when I say everyone I mean it!! I just love the way Roy and Armstrong talk to him, and Riza is such a nice lady, helping him out with what a girl likes and stuff I'm about to write about their date!! And just guess who's on a date too...

uh...what's a gaiden?

Gaidens are short side stories. They might become additional information that the characters might refer to in the main story, or they might set up new story arcs or used to explain some stuff that had happened in the main story. They also may not be related to the main story(or even a parallel universe version).

Gaidens are generally drawn by the mangakas when they want to take a break, or they had a really interesting idea that is out of sync with the current story timeline but they really want to draw it out.

FMA currently has these gaidens:
- Black Hayate's adoption
- Ed vs Roy
- Havoc's matchmaking
- Jude the Blind Alchemist and his Homunculus
- the consequences of that meeting between Riza and Winry in Resembool then

The first three appeared in the tanks, Jude's appeared in the Perfect Guide book and the last appeared in that Book of Figure Red. All of the FMA gaidens so far looks to be part of the manga timeline (Black Hayate's adoption is the most obvious one), so it won't be like Rurouni Kenshin's gaidens or such where it's a parallel universe.

I just read the "Book in Figure Red" raw. All I can say is "...So that's why..." Definitely a lot of EdxWinry.
